This is a super simple, quick, and delicious dinner to throw together if you've got leftover brats in the freezer from summer. Incredibly delicious with roasted veggies!
2-4 peeled and chopped sweet potatoes
3-6 chopped carrots (optional)
1-2 chopped onions
4 skinless brats chopped or crumbled
salt and pepper to taste
Directions: Cover pan with parchment paper, preheat oven to 375. Peel and chop veggies and place on the prepared pan. Sprinkle with salt and pepper. Spread chopped brats over the top, and bake for about 45 minutes. Enjoy!
